Christmas Cupcakes

I needed to trial the cake mix that I am making for Christmas day so made a batch of cupcakes to take to Carol's By Candlelight. They were super moist and very moreish so looking forward to Christmas Day!

Somebody loved the carols :-)

Oreo Pops

Everyone loves a Cake Ball but sometimes you don't want to go to the effort of making the cake.
A friend suggested these - Oreo Balls. Very very simple to make.
2 packets of Oreo biscuits whizzed up in the food processor
125gms of cream cheese & whizz up again
Then, roll them into balls, stick them on a stick & decorate as you like.
I've dipped mine in chocolate & made some deranged reindeer.

Another one bites the dust..

Unbaked Lemon Cheesecake

We celebrated Mum's 54th birthday last Sunday night and I wanted to make her something gluten-free and yummy. The words 'gluten-free' and 'yummy' aren't generally found in the same sentence but this one went down a treat! It's a super easy recipe that I whipped up in 15 minutes, I substituted gluten-free macadamia biscuits in the base instead of those stated in recipe.

Red Velvet Cake Balls

Bit of a step back in time, but for my Dad's birthday in August, I made him some Red Velvet Cake Balls. This was the first time I'd made them but definitely not the last. They are sublime. You make them by cooking your cake (doesn't matter what flavour), crumbling up the cooked cake and mixing it with the icing. You then roll into balls and the tricky part is dipping them in chocolate. Here, I've used Red Velvet Cake, Cream Cheese icing, alternated between white and dark chocolate, and decorated by dipping a skewer in melted choc. We decorated an egg carton to box the balls in Dad's favourtite footy colours.

Happy Birthday Ang!

Today, I had two gorgeous friends, Ang and Jane, and their munchkins over for a play date with Olive. Ang's birthday tomorrow was a fabulous excuse to bake a cake, so I whipped up Sweetapolita's Dark Chocolate with Strawberry Swiss Meringue Buttercream cake. It was my first attempt at making a Swiss Buttercream and I'm glad that I made a double batch because I ate half of it out of the bowl. It is dreamy. Very stable and fabulous to play with without the super sweet taste of regular buttercream. Mmmm *drool*.

Clearly, I need a little more practice in the piping department but I did have fun trying! This was my first attempt at roses. I think they may need a little 'workshopping' with my Gran, she'd be horrified if she saw these!

Olive's 1st Birthday Party

Our little girl turned one last month. Naturally, it was a huge occasion for mummy and daddy and we celebrated the day with our beautiful friends and family in our garden. I'd been trawling Pinterest for ideas on cakes and party styling and crossed my fingers that I could pull it off without any disasters.

Sweets Table

I made the tissue paper pom poms from a Martha Stewart tutorial & the name across the front was made from an old book and a glue gun. The talented Renee Bell from NFE Design took the photo in the background when Olive was a week old. The sweets that took me the longest and that I was most happy with, were the ice cream cone cake pops at the back of the table. They are also the only sweet I didn't get an individual photo of!

Olive's birthday cake was a pink vanilla layer cake with whipped vanilla bean butter cream icing. I made the layers a week in advance and froze them which made it easier to frost the day before the party. I had no idea if the cake would work until it was cut and was stunned that it actually did. I made the tiny bunting on top with skewers and ribbon.

The Mess Starts Here!

Welcome to Mum's Messy Kitchen. My journal of amateur cooking and lunch box adventures. I won't lie, despite my love of cakes and sweet treats, I'm prone to a good kitchen disaster. I'll attempt to log most of my cooking endeavors (the good and the messy) with a bit of photographic evidence.
