I needed to trial the cake mix that I am making for Christmas day so
made a batch of cupcakes to take to Carol's By Candlelight. They were
super moist and very moreish so looking forward to Christmas Day!
Somebody loved the carols :-)

Oreo Pops
Everyone loves a Cake Ball but sometimes you don't want to go to the effort of making the cake.
A friend suggested these - Oreo Balls. Very very simple to make.
2 packets of Oreo biscuits whizzed up in the food processor
125gms of cream cheese & whizz up again
Then, roll them into balls, stick them on a stick & decorate as you like.
I've dipped mine in chocolate & made some deranged reindeer.
Another one bites the dust..

Unbaked Lemon Cheesecake
We celebrated Mum's 54th birthday last Sunday night and I wanted to make her something gluten-free and yummy. The words 'gluten-free' and 'yummy' aren't generally found in the same sentence but this one went down a treat! It's a super easy recipe that I whipped up in 15 minutes, I substituted gluten-free macadamia biscuits in the base instead of those stated in recipe.
