We celebrated Mum's 54th birthday last Sunday night and I wanted to make her something gluten-free and yummy. The words 'gluten-free' and 'yummy' aren't generally found in the same sentence but this one went down a treat! It's a super easy recipe that I whipped up in 15 minutes, I substituted gluten-free macadamia biscuits in the base instead of those stated in recipe.
